◆Introduction
SUSHI-EITARO was founded in 1988 at Ikenohata, Ueno, Taito-ku,Tokyo, and can be found in front of the Shinobazu Pond and right behind the Tokyo University.[MAP]
Today our restaurant benefits from its high reputation of its original cuisine which preserves the Japanese authentic traditional sushi-style, Edomae and at the same time it takes advantages from the latest logistic services and conservational technologies and applies its seasoning to todays eating tastes?
The significant points of SUSHI-EITARO is that we take particular care to select and prepare the marine foods. For example, we buy the fresh fish directly at the wholesale market every morning, and will never buy frozen fish or farmed fish because we believe that they are not comparable to the flavour of that of the wild variety. Within a short time of purchase, the fish are very carefully cleansed by hand using a toothbrush and hand towels. This is to eliminate their fishy smell and to ensure they are of a high enough quality to meet our standards.
As a result of this process, there is no need to use additional ingredients to hide the smell and the sushi is just served with either Wasabi and/or our original soy-sauce. our costumers often comment that the fish is like no other fish they have tasted due to its natural, no fishy smell and no additive form. A high praise for the quality of our sushi.
In our restaurant, you can choose your order from various options.If you are not familiar with the variety of sushi-toppings, you can order from the sushi set menu: 7 pieces of sushi for 2,100 yen, 10 pieces of sushi for 3,680 yen and 13 of sushi for 5,250 yen. Or, if you prefer to taste other types of Japanese traditional cuisine, such as grilled fish, steamed and fried food etc., then you can select from one of the other fixed course menus which includes assorted sashimi and other cooked dishes, 5 pieces of sushi, soup and dessert. The price is 6,300 yen, 8,400 yen and 10,500 yen for one person - depending on the items that you choose.
If you wish to taste our food at a special price then the lunchtime menu is for you,(11:30-13:30 Monday to Friday). At these times you will find that the Chirashi (Bowl of Scattered Sushi) is 1,000 yen, the Jou-Nigiri (Delux Nigiri Sushi) is 1,500 yen and so on.
Regarding drinks, we serve many kinds of Japanese sake(rice wine), shochu (sweet-potato spirit, wheat spirit, sweet chestnut spirit, brown sugar spirit...etc), beers, Chablis and soft drinks are also available.
And also, we serve you delivery or catering as well for your convenience.

Nodoguro, Akamutsu - Blackthroat seaperch
"Nodo" means throat and "guro" means "black". They are common especially in the Sea of Japan and famous as its soft and delicious taste. |

Salt is recommended as its seasoning rather than soy-sauce.
By eating with salt, you can see a natural sweetness of Sea Urchin.
Usually we buy the best quality Sea Urchin from the Tukiji wholesale market. |
